A fresh, beautiful, tasty, presentable cake
…the in-laws are supposed to come
…it’s my husband’s birthday and everyone at work is waiting to see what cake he will bring
…or I’m planning a ladies night and I want to shine 🙂
And then I bake this cake.
It is best done twice:
- You will bake the dough in the evening
- In the morning, or after work, you can finish the filling in 30 minutes, even with a glass of wine – remember, it is very important that you have a real experience and joy from baking!
1. DOUBLE
Ingredients:
- 3 eggs
- 60 g of granulated sugar
- 2 PL of water
- 50 g of flour (I used gluten-free Farina flour from Schär)
- 1 tsp baking powder
- a pinch of salt
- 10 g cocoa
Procedure:
- Prepare a round cake tin and sprinkle it with coconut or almond flour (instead of palmarin)
- Preheat the oven to 180°C
- Separate the yolks from the whites
- Beat the egg whites into peaks
- Beat egg yolks with sugar and water
- Add cocoa, flour, baking powder and salt
- Lightly mix the snow into the dough (I do it with the beaters of a whisk)
- Pour the dough onto a tray and put it in the oven for 15 minutes.
2. FILLER
Ingredients:
- 750 g of white yogurt
- 2 packets of vanilla sugar
- 1 package of gelatin thickener
- 2 cups blueberries (or other likeable fruit)
- 250 ml of fruit juice
- 1 package of cake jelly – clear
- 2 tablespoons of sugar
- a few mint leaves
Procedure:
Yogurt filling:
- pour the gelatin stiffener into a small pot, add 3 tablespoons of water, mix and let stand for 10 minutes
- Cut the dough in half
- sprinkle the lower part thickly with blueberries (don’t stress, if they are too soft, it will be like smeared with jam:))
- mix yogurt with vanilla sugar
- heat the hardener so that it melts but does not boil
- mix the thickener into the yogurt with vanilla sugar and pour over the bottom part sprinkled with blueberries
- put the second part of the dough on the yogurt mixture
Gelatin:
- Place blueberries/blackberries or other fruit on top
- mix cake jelly with 2 spoons of sugar and 250 ml of blueberry juice
- boil the mixture for 1 minute, let it cool for a short time so that it doesn’t start to harden and pour it on the cake
- you can decorate with, for example, mint leaves, but immediately after pouring the gelatin, because it hardens quickly
One friend at ladies night reviewed this cake with the words:
“what if I did this to my B., I’m already engaged…” 🙂
