Banana fritters (gluten-free and dairy-free)

Imagine you have:

. day off
. desire to do NOTHING
. desire to stay in bed all day
. dry autumn weather, which only multiplies it all

In addition, there is:

. a nervous husband waiting for a quick, easy and above all healthy meal

And to make matters worse:
. an empty refrigerator welcomes you in the kitchen

Um…. bananas and eggs?

Ingredients:

2 bananas
3 eggs

Procedure:

  1. Mix the bananas and eggs into a mushy dough
  2. We bake like classic fritters in a pan

Enhancement options:

  • To achieve a thicker dough – add coconut
  • For sugar lovers – while the fritters are in the pan, we drizzle them with grandfather’s honey
  • For a better taste and visual experience – spread the pancakes with homemade jam and decorate with almond slices, apple and mint
